Saffron — the rarest spice on earth — is harvested from the fragile Crocus sativus flower, which blooms only once a year. Each blossom yields just three crimson stigmas, hand-plucked within an hour of opening. It takes more than 200,000 blossoms to make a single pound, a devotion that borders on the sacred. We fold generous amounts of this luminous spice into our Estate Honey, gathered from the lower orchard at Flamingo Estate.
This is our finest Honey, harvested in small batches and usually reserved for family and friends. Our Bees feed on flowering Rosemary and Lavender that grow in abundance around the Olive Trees. The result is a golden elixir alive with umami, warmth, and impossible depth. Tastes of sunlight, dry earth, and slow luxury.
